Yeonpotang (연포탕) is a light, refreshing Korean seafood soup that's traditionally made with octopus and various vegetables. This recipe serves two people and focuses on bringing out the natural flavors of the ingredients. It's perfect for a healthy and satisfying meal.
Ingredients for 2 Servings:
- 1 small octopus (about 200-300g, fresh or cleaned)
- 100g of clams (optional)
- 80g of radish (thinly sliced)
- 1/2 small onion (sliced)
- 1 green onion (cut into 4-5 cm pieces)
- 1/2 zucchini (sliced)
- 3-4 shiitake mushrooms (sliced)
- 1-2 cloves of garlic (minced)
- 1 red chili pepper (optional, sliced)
- 1/2 tablespoon of soy sauce
- 1/2 tablespoon of Korean chili flakes (gochugaru, optional)
- Salt to taste
- Pepper to taste
- 4 cups of water
- 1 teaspoon of sesame oil (optional for drizzling)
Instructions:
1. Clean the Octopus:
Thoroughly clean the octopus by massaging it with coarse salt to remove any slime. Rinse under cold water and, if needed, remove the beak, eyes, and internal organs. Cut the octopus into bite-sized pieces.
2. Prepare the Vegetables:
Thinly slice the radish, zucchini, and onion. Cut the green onion into 4-5 cm pieces. Slice the shiitake mushrooms, mince the garlic, and slice the red chili pepper if you want to add some spice.
3. Make the Broth:
In a medium pot, add 4 cups of water and the sliced radish. Bring it to a boil over medium heat, allowing the radish to cook for about 10 minutes. This will form the base of the broth.
4. Add Octopus and Vegetables:
Once the radish is slightly softened, add the octopus, clams (optional), onion, green onion, zucchini, and mushrooms. Simmer the mixture for another 10-12 minutes until everything is cooked.
5. Season the Soup:
Add the minced garlic, soy sauce, and Korean chili flakes (gochugaru) for some heat, depending on your spice preference. Season with salt and pepper to taste. Adjust the flavors by adding more soy sauce or salt if necessary.
6. Final Touch:
Taste the soup and make final adjustments. You can drizzle a small amount of sesame oil for extra richness if desired, though it's optional.
7. Serve:
Serve the Yeonpotang hot, along with steamed rice and side dishes (banchan) for a complete meal.
Tips:
- If using frozen octopus, make sure it's fully thawed before cooking.
- For a richer broth, consider adding dried anchovies or kelp to the boiling water along with the radish.
- You can include other vegetables like spinach or add tofu to make the soup more filling.
